Hey there, nice work :) When I see that correctly, you're currently setting up the uki boot entry manually. You might want to contribute to sdbootutil directly so it gains support for ukis upstream and entries are created automatically :)
Thank you ! :) Indeed, the next step will be to contribute to sdbootutil and use it for the UKI installation. I am going to work on it :)
